O café é um produto agrícola cujo valor comercial é vinculado à sua qualidade. Quanto melhores as suas propriedades, maiores serão os preços alcançados. A qualidade do café pode ser influenciada por um conjunto de fatores, destacando-se as características genéticas, as condições ambientais e práticas culturais empregadas, sobretudo na colheita, processamento e secagem. As características sensoriais podem ser influenciadas pela acidez da bebida, sabor e fragrância, entre outras. O Incaper desenvolve um programa de pesquisa na área de melhoramento genético que possui, entre seus objetivos, a caracterização da qualidade dos genótipos elites e em fase de pré-lançamento, para que as novas cultivares a serem lançadas e recomendadas para o Estado, distingam-se também por este importante atributo. Este trabalho visa a identificação de progênies com qualidade sensorial superior para subsidiar o desenvolvimento e recomendação de novas cultivares que aliem, qualidade genética à boa performance agronômica para o Estado. Foram analisadas amostras de 40 progênies elites de café Arábica do referido programa. Os resultados mostram que o comportamento das progênies é altamente influenciado pela safra e pela forma de processamento. A partir da análise de componentes principais foi possível agrupar os genótipos em três grupos em função da pontuação total alcançada para cada genótipo avaliado na análise sensorial, nos dois sistemas de processamento, considerando a média dos dois anos safras, permitindo indicar aquelas mais indicadas para se constituírem novas cultivares, desde que aliem este comportamento às outras características agronômicas e industriais.
Coffee is an agricultural product whose commercial value is linked to its quality. The better your properties, the higher your prices will be. Coffee quality can be influenced by a number of factors, such as genetic characteristics, environmental conditions and cultural practices, especially harvesting, processing, etc. Sensory characteristics may be influenced by beverage acidity, taste and fragrance, among others. Incaper develops a research program in the field of genetic improvement that has, among its objectives, the characterization of the quality of the elite and pre-release genotypes, so that the new cultivars to be launched and recommended for the State, distinguish them also for this important attribute. It aims to identify progenies with superior sensory quality to support the development and recommendation of new cultivars that combine genetic quality with good agronomic performance for the state. Samples of 40 elite Arabica coffee progenies from this program were analyzed. The results show that the progeny behavior is highly influenced by the crop and processing, whether natural or via peeled cherry. It is also possible to group the genotypes into three groups, based on the principal component analysis as a function of the total sensory score achieved by each one of them, in the two processing systems, considering the average of the two crop years, allowing to indicate those most suitable for new cultivars, provided they combine this behavior with other agronomic and industrial characteristics. Ripening cycles of the coffee are important for planning the harvest and post-harvest processing of the fruit and influence the sensory quality of the coffee beverage. In the Coffea arabica, the number of these annual cycles depends on the edaphoclimatic conditions, soil microbiota, altitude, and genotype. In this study, we present in an unprecedented way how the microbial communities (bacteria and fungi) of the soil and fruits of the coffee tree and the quality of chemical and sensory of coffee fruits can change depending on the harvest season. We also evaluated whether there is a relationship between changes in microbial communities (soil and fruits) and chemical and sensory panels of the coffee in two seasons. Cherry coffee fruits sampling and soil were carried out in September and November which have different edaphoclimatic conditions. Profiles of the microbial community and chemical and sensory panels of the samples were performed using the DGGE technique, Mid-infrared spectroscopy, and Specialty Coffee Association protocols. Microbial communities (soils and fruits) profile was different between distinct sampling periods. Composition of the coffee varies with the harvest since the coffees harvested in September have higher concentrations of caffeine and chlorogenic acids and lower concentrations of proteins and lipids compared to the samples collected later. A correlation between infrared spectrum and microbial community was observed in the second harvest period which had a final sensory score higher than another harvest. These results show that edaphoclimatic factors and microbial communities can be associated with the final quality of the beverage.
